Savory Chicken & Brussel Sprouts

Savory chicken & brussel sprouts are one of my favorite weeknight meals because of the short prep time and the fantastic taste.

It’s really as easy as cubing the chicken and marinating and halving the brussel sprouts, seasoning and roasting them.

You will be surprised by the wow factor when you sit down to enjoy the fruits of following this recipe.

    Chicken Marinade
  • Brussel Sprouts Seasoning
  • Roasted Brussel Sprouts Table Seasoning

  • Gather ingredients and rinse fresh dill & brussel sprouts
  • Measure the spices for the chicken marinade and both Brussel sprouts seasonings. set each aside in small dishes
  • Measure the spices for the brussel sprouts seasoning
  • Measure the spices for the brussel sprouts table seasoning
  • Measure the spices for the chicken marinade
  • Combine remaining ingredients for chicken marinade in a large bowl along with the pre-measured spices
  • Cube up the chicken
  • Put the cubed chicken into the marinade
  • Mix until the chicken is evenly coated
  • Pick dill and finely chop and preheat the oven to 400 degrees
  • Cut brussel sprouts in half and remove loose leaves
  • Combine dill with all other Brussel sprouts seasoning ingredients in a large bowl (not the table seasoning)
  • mix the ingredients together until combined
  • add the brussel sprouts to the bowl with the seasonings
  • Toss the brussel sprouts to get an even coating onto them
  • Grease or spray a baking pan and lay out all the Brussel sprouts with the flat side facing up.Put the Brussel sprouts in the oven for 35 minutes.
  • Once the brussel sprouts have 15 minutes remaining on the timer preheat a large pan on medium-low heat.Add a drizzle of extra virgin olive oil once heated
  • Add chicken and any loose marinade to the preheated pan
  • Continue to mix around the cubes making sure to allow each side to get good browning
  • Keep on mixin'
  • The chicken should be done at the same time or slightly before the Brussel sprouts
  • Remove brussel sprouts at timer or when they have a nice roasting on them
  • Plate everything and then use the table seasoning to top the Brussel sprouts (and chicken too if you like)
