It’s breakfast time and you’re feeling kinda fancy, but you don’t feel like leaving the house. No problem we’ve got you covered with our Poached Eggs Avocado and Salsa recipe.

A lot of people are afraid to attempt it but poaching eggs is easier than you think, follow our recipe and you’ll have it mastered in no time.

  • Gather your ingredients and cookwares
  • Warm large pot of water just above low heat. The goal being to keep the pot at a light simmer without much bubbles disturbing the eggs.
  • Rinse the tomatoes and dice them
  • Measure and add in the spices to the tomatoes
  • Dice up the fresh dill
  • Take a small bowl and set a fine mesh strainer on top of it
  • crack an egg into the mesh strainer to let the thinner egg whites slip thru into the bowl below
  • Once you have all the thin white separates gentle let the egg roll out into a small dish or ramekin
  • Hopefully your roll didn't end with broken yokes
  • Follow this process for all four eggs with each strained egg having its own ramekin dish
  • Slice up the avocado longways
  • sliced in half longways
  • pop out the seed
  • slice across without breaking the skin
  • peel the skin back from the top and let the slices sort of pop out as you peel away
  • Voila fancy avocado slices
  • Do the same thing with the other half
  • More delicious avocado slices
  • Make sure the water in the pot isn’t boiling but is just below a simmer with not many bubbles
  • Hold a large non-slotted spoon over the pot, and gentle pour one of the eggs onto the spoon
  • Take note of the time. slowly lower the spoon into the water allowing the egg to stay in one smooth blob, and then gently slide the spoon out.
  • Complete this same process until each of the eggs is in the water. Go slow to make sure you don’t disturb the other eggs as you add each one to the pot.
  • For a gooey center you only want each egg in the pot for 3-4 minutes. Use the spoon to slowly raise each egg out of the water and plate them. (cooking times will vary depending on water temp)
  • If you prefer a more solid yoke it would stay in for roughly 5 minutes.
  • Add sliced avocado and salsa mixture, break open the yolk and enjoy!
  • For the dippy folks break open the yokes and enjoy your breakfast bounty!
  • For the solid yoke folks, break up everything into a scramble and dig in!
