Whether you’re having a fancy dinner party or just want to mix up the norm, you will definitely love our Meatballs and Fresh Mozzarella recipe. The savory flavors you get from sauteing and broiling will make this recipe a staple in your weeknight meal rotation.

While listed as an appetizer this actually was a nice light meal for two.  Adding a Chef or Caesar salad on the side of the the Meatballs and Fresh Mozzarella is a great way to fill you up without all the carbs from pasta.

  • Lay out your ingredients and rinse the fresh herbs
  • Pick the herbs and measure out the seasonings
  • In a large bowl add the ground beef, large egg, and garlic
  • Whisk the egg on the side to combine yolk and white. Add the measured seasonings to the bowl.
  • Chop up the fresh herbs, it doesn’t have to be a fine chop, medium sized pieces are fine
  • Add the chopped herbs to the bowl
  • Add the panko and use your hands mix the ingredients together until evenly spread throughout the ground beef
  • Pinch off tangerine sized pieces and form into meatballs making sure to put some pressure on each one to help them stay together
  • Heat a pan just above low heat
  • Add meatballs to the pan once it is up to temp, they will stick at first which is fine. You want to let a crust build up on the sides
  • Carefully roll the meatballs to ensure the browning happens evenly
  • Season the mozzarella in some of the chopped herbs
  • Continue rolling the meatballs for even browning
  • Once they are fully cooked take them out of the pan and lay them onto a baking sheet, add a slice of the herbed mozzarella on top of each one
  • Place in the over under the broiler on high just long enough to melt the mozzarella
  • Add a dollop of marinara on each meatball, and a dash of Parmesan cheese
  • Plate and enjoy!
