Curry Chicken And Gobi

    Chicken Curry Ingredients
  • 2 Chicken Breasts
  • 1.5 tsp Penzy's Curry
  • 1 tbsp Extra Virgin Olive Oil
  • Gobi Ingredients
  • 1 Head of Cauliflower
  • 1 tsp Minced Garlic
  • .25 tsp Ginger
  • .5 tsp Turmeric
  • .25 tsp Cardamom
  • .5 tsp Garam Masala
  • .5 tsp Paprika
  • .5 tsp Salt
  • 1 tsp Coriander
  • 2 Bay Leaves
  • 1 Tomato
  • 3 tbsp Extra Virgin Olive Oil
  • Several Sprigs of Fresh Cilantro
  1. Gather ingredients and rinse cauliflower, tomato, and fresh cilantro
  2. Slice across the chicken breast cutting it into 1/4 inch strips
  3. In a medium bowl add the 2 tbsp extra virgin olive oil and 1.5 tsp penzys curry
  4. Mix together until you have a thin paste
  5. Add the chicken breast slices and mix around until the slices are coated
  6. Cut up cauliflower into medium sized florets
  7. Dice up the tomato
  8. Put large saucepan on low heat and add 3 tbsp oil, minced garlic, and bay leaves.Sauté until the garlic begins to brown.
  9. Measure out the spices for the gobi
  10. Pick the cilantro leaves from the stems
  11. Keep an eye on the browning garlic. Occasionally tilt and gently shake the pan to let the oil roll the garlic and bay leaves around.
  12. Roll the cilantro leaves up in a bunch to make it easier to chop
  13. Chop up the cilantro, a rough chop is fine
  14. Add tomato and gobi spices to the saucepan and cook for five minutes
  15. Remove the bay leaves from the saucepan and discard
  16. Increase heat to medium-low and add cauliflower to the saucepan. Mix cauliflower around to coat in the sauce.Cook cauliflower with lid on for another 25 – 35 minutes (until cauliflower is cooked through)
  17. Put a large pan on medium-low heat when there is roughly 15 minutes left on the gobi.Add a drizzle of extra virgin olive oil to the pan once it is warmed up.
  18. Add the marinated chicken to the pan, making sure all pieces are separated
  19. Allow the chicken to get a good searing on each side, it will cook quickly being so thin
  20. Flip the chicken once to get the other side seared
  21. Gobi has cooked down nicely
  22. Chicken has a good sear on both sides
  23. Plate the gobi and top with chopped cilantro
  24. Plate the chicken, salt to taste and enjoy!
