Our Curry Chicken and Gobi recipe isn’t quite as good as Nirvana, but it might take you somewhere close.

You don’t have to fear our curry chicken and Gobi being a fiery curry dish, it’s packed full of fantastic flavor profiles without the heat.

  • Gather ingredients and rinse cauliflower, tomato, and fresh cilantro
  • Slice across the chicken breast cutting it into 1/4 inch strips
  • In a medium bowl add the 2 tbsp extra virgin olive oil and 1.5 tsp penzys curry
  • Mix together until you have a thin paste
  • Add the chicken breast slices and mix around until the slices are coated
  • Cut up cauliflower into medium sized florets
  • Dice up the tomato
  • Put large saucepan on low heat and add 3 tbsp oil, minced garlic, and bay leaves.Sauté until the garlic begins to brown.
  • Measure out the spices for the gobi
  • Pick the cilantro leaves from the stems
  • Keep an eye on the browning garlic. Occasionally tilt and gently shake the pan to let the oil roll the garlic and bay leaves around.
  • Roll the cilantro leaves up in a bunch to make it easier to chop
  • Chop up the cilantro, a rough chop is fine
  • Add tomato and gobi spices to the saucepan and cook for five minutes
  • Remove the bay leaves from the saucepan and discard
  • Increase heat to medium-low and add cauliflower to the saucepan. Mix cauliflower around to coat in the sauce.Cook cauliflower with lid on for another 25 – 35 minutes (until cauliflower is cooked through)
  • Put a large pan on medium-low heat when there is roughly 15 minutes left on the gobi.Add a drizzle of extra virgin olive oil to the pan once it is warmed up.
  • Add the marinated chicken to the pan, making sure all pieces are separated
  • Allow the chicken to get a good searing on each side, it will cook quickly being so thin
  • Flip the chicken once to get the other side seared
  • Gobi has cooked down nicely
  • Chicken has a good sear on both sides
  • Plate the gobi and top with chopped cilantro
  • Plate the chicken, salt to taste and enjoy!
